July 2022 Tea Tasting Tuesday
Are you following us on instagram or facebook? If so you may have noticed our Tea Tasting Tuesday posts! Each Tuesday we take a deep dive into one of our teas. This month we were focused on Himalayan teas! These high grown black teas are world renowned for their multitude of flavours, whilst remaining light and refreshing.
#1 Darjeeling 1st Flush Happy Valley FTGFOP
First flush Darjeelings are often sort after for their bright, fresh flavour. This particular Darjeeling is a high grade leaf (FTGFOP – Fine Tippy Golden Flowery Orange Pekoe), which was harvested in early spring. The leaves give a golden yellow liquor (infusion) with a clean and smooth flavour. Floral notes reminiscent of meadow flowers are present with each sip. There is a long lasting pleasant aftertaste. This fine tea and many other first flush Darjeelings are at their best when drunk without any milk.
How to brew:
Use filtered and freshly boiled water 95°C. Use 1 teaspoon (2g) per 200ml cup +1 for the pot. Infuse for up to 3 mins.
#2 Sikkim Temi FTGFOP
This beautiful black tea is produced in the small Indian state of Sikkim, which neighbours Nepal, Tibet and Bhutan. Sikkim is one of the lesser known Himalayan tea growing areas, however, it produces exquisite teas! Like the previous tea we tried, this is another high grade leaf. The beautiful multi coloured leaves give a crystal clear, deep honey-yellow infusion with a flavour reminiscent of pecan nuts.
How to brew:
Use filtered and freshly boiled water 95°C. Use 1 teaspoon (2g) per 200ml cup +1 for the pot. Infuse for up to 3 mins.
#3 Golden Nepal 1st Flush FTGFOP
A spring picked black tea from the Himalayan mountains, sometimes known as ‘the roof top of the world’. Nepalese teas can have very similar qualities to their Darjeeling neighbours, but without the high price tag! This is due to the humid climate experienced in this growing region. It leads to full bodied teas that are rich in antioxidants and full of flavour! The golden infusion offers a clean, floral, flavour with subtle nutty notes.
How to brew:
Use filtered and freshly boiled water 90-95°C. Use 1 teaspoon (2g) per 200ml cup +1 for the pot. Infuse for up to 3 mins.
#4 Darjeeling Chamling 2nd Flush SFTGFOP1 
Our final tea for this month was our highest grade Darjeeling tea! SFTGFOP stands for Super Fine Tippy Golden Flowery Orange Pekoe. A superb quality Darjeeling tea produced from beautiful aromatic leaves and silver tips. Second flush teas are produced later in the year, usually between May and June. There can be the assumption that first flush Darjeelings are the best, however, this is very much down to personal preference. The liquor (infusion) for this tea is a clear amber colour, with a flavour reminiscent of pouched pears with a smooth malty finish.
How to brew:
Use filtered and freshly boiled water 100°C. Use 1 teaspoon (2g) per 200ml cup +1 for the pot. Infuse for up to 3 mins.
